The words “nice” and “head chef” don’t usually appear in the same sentence, but Paul Jobin breaks the rules – not only with his friendly nature, but with his exciting take on antipodean food.
A “pinch of salt” is known to bring out the flavour of food, and that is what Jobin aims to do in his first cookbook. After travelling and holding down head spots at both Huka Lodge and Kauri Cliffs, Jobin gathered up his knowledge of risqué and innovative flavours and applied it to Kiwi-inclined dishes and local ingredients.
